If  you are invited to Tony & Mia's home for dinner you may expect: 

An array of flatbreads; Tony's homeade mozzarella & pinwheels; signature global cheese platters and fine meats; grilled octopus; free range roasted herb chicken; seafood couscous; grilled wild caught cod with poblano tacos; turkey srirachi -lava meatballs; zucchini pasta with avocado sauce; lobster mac n cheese (using butternut squash); organic vegetable lasagna; grilled free range porterhouse steaks; fresh calamari salad; organic beet salad with candied walnuts with locally sourced goat cheese.

Tony began an early culinary career through his family-owned restaurant, “La Cucina di Nadia” in Long Branch, NJ which boasted some of the finest authentic Italian and  American fan fare in Monmouth County. His restaurateur mother Nadia, born in Rome, instilled some early culinary credibility in a young man whose talents were just beginning to cultivate.  Tony learned to present authentic northern Italian dishes as well as meeting the demands of American palates by delivering a perfectly grilled juicy tenderloin filet or Beef Wellington. The restaurant often catered numerous affairs including southern-style barbques.

Mia grew up in a large Sicilian family which turned-out traditional dishes that carry an array of Greek, Spanish, French and Arab influences.  Comfortable in the kitchen from an early age, her culinary experimentation showed a talent and love for preparing fresh, seasonal food. She spent time during her formative years with her mother, grandmother and aunts preparing authentic dishes. Her father regarded the importance of growing large organic gardens as one of the key ingredients to good health. Mia learned about home-harvesting quality produce in early years and using it in the kitchen.
